Why legumes are good for you — and for the planet

“Superfoods” are one of those marketing terms that sound scientific but aren’t. There isn’t a strict medical definition, and the label often gets attached to exotic ingredients like goji berries or açaí. Meanwhile, one of the most genuinely nutrient-dense, climate-friendly food groups is sitting quietly on supermarket shelves across Germany and the EU: legumes.
Chickpeas, lentils, beans, and peas are everyday foods — affordable, shelf-stable, and deeply embedded in many European cuisines (from Mediterranean stews to Central European soups). They’re also a rare example of a win-win: better nutrition for people and lower impact for agriculture.
Legumes are rich in plant protein and dietary fibre, and they bring a concentrated package of micronutrients such as iron, zinc, folate, and magnesium, alongside a wide range of protective plant compounds.
This is why many dietary guidelines treat legumes as a foundational food group. The German Nutrition Society (DGE), for example, recommends eating legumes at least once a week (and nuts daily). Across Europe, national food-based dietary guidelines frequently include weekly targets for legumes as part of healthy eating patterns.
No single food “prevents” disease on its own, but legumes consistently show up in studies of healthier body weight and lower cardiovascular risk.
One analysis of US national nutrition survey data found that adult bean consumers had a 22% lower risk of being obese and a 23% lower risk of elevated waist size compared with non-consumers (with bean consumers also showing higher fibre and micronutrient intake).
A long-running epidemiologic follow-up study reported that people eating legumes four or more times per week had a 22% lower risk of coronary heart disease and an 11% lower risk of cardiovascular disease, compared with those eating legumes less than once per week.
And in a cohort of older adults (the “FHILL” study), researchers observed a 7–8% reduction in mortality risk for every 20 g increase in daily legume intake, describing legumes as a particularly strong dietary predictor of survival within that dataset.
These studies don’t mean legumes are magic. But they do support a simple conclusion: making legumes a regular part of your diet is strongly aligned with healthier long-term outcomes.
Legumes can be extremely easy to integrate into a German/EU lifestyle because they work as both a main protein and a side component: lentil salads, chickpea curries, bean stews, hummus, split-pea soups, pasta e fagioli, or simply adding beans to a mixed salad.
One important point: don’t eat most legumes raw. Some raw beans and pulses contain natural compounds (e.g., lectins) that can cause unpleasant or even dangerous reactions, but proper cooking destroys them. Canned legumes are already cooked; if you use them, rinsing helps reduce salt.
Legumes don’t just “have a smaller footprint” because they’re plant-based. They also change how farming systems work.
Legumes have a unique partnership with soil bacteria (rhizobia) that allows them to fix nitrogen from the air and make it available in the soil. This can reduce the need for synthetic nitrogen fertilisers — which matter because fertiliser production is energy-intensive and fertiliser use contributes to greenhouse gas emissions and water pollution. FAO highlights nitrogen fixation as one reason pulses can support climate-smart agriculture. A broader research literature also describes how legumes improve soil fertility and support more sustainable cropping systems.
From the consumption side, legumes also tend to have much lower environmental impacts than most animal products. A landmark global analysis in Science showed that animal products generally dominate land use and emissions, while plant proteins (including pulses) are typically far lower-impact per unit of nutrition.
For the EU, legumes are also a strategic food. They diversify protein sources, fit well into crop rotations, and can support soil health in a climate that is becoming more volatile (droughts, heatwaves, heavy rainfall). In other words, legumes are not only “good choices” for individual diets — they’re a practical ingredient in building a more resilient food system.
Legumes aren’t trendy. They don’t need to be. They’re one of the most evidence-backed upgrades you can make to a diet: more fibre, more micronutrients, solid protein — and a smaller environmental footprint with real benefits upstream in farming.
If you want a simple EU-friendly rule: swap one meat-based meal per week for a legume-based meal (lentil bolognese, chickpea stew, bean chili, hummus + whole grain bread + salad). Start small, make it tasty, and it becomes a habit — exactly the kind of change that scales.
